I often puree alot of fresh garlic and freeze it, it always stayed good for days,however last one batch when I take it out of the freezer and it starts to defrost it starts to turn green I wonder why? It never happened before , the storage method is same.

I really would not know Alka. Is there a difference in the quality of garlic or the maturity of garlic? I wonder if this lot is less dried and more tender? Only my guess....
