Namkeen Sev

Thin, fried savoury ‘straws’ of besan (chickpea flour)

Ingredients

  • Besan (Chickpea flour) 1 cup
  • Salt 1 tsp or to taste
  • Oil for deep-frying
  • A sev making press (like a cookie press, with the fine holed disk)
 

Preparation

  • Mix besan and salt. Add water and mix into a stiff dough.
  • Place dough in the sev making machine, fixed with a sev plate, of the smallest holes.

  • Heat oil and press out the sev in a circular motion. Turn over and fry till crisp, but let it not get dark brown.

  • Lift out of the oil, drain on absorbent paper. Break into small pieces and store in an airtight jar.
