Pan fried Chicken Fillets

  • Chicken, boneless breast pieces 500g
  • Garlic paste 1 tsp (5 g)
  • Vinegar 1 tbsp (15 g)  
  • Flour (Maida) 2 tbsp (15 g)
  • Black pepper (Kali Mirch ), freshly powdered 1/8 tsp
  • Salt 2 tsp or to taste
  • Basil, chopped fine 2 tbsp
  • Olive Oil for pan-frying


  • Mix together for the marinade---the garlic, vinegar, flour, black pepper, salt and basil
  • Slit the breast pieces lengthwise. Flatten the chicken pieces, as thin as possible, by beating with a knife or mallet.

  • Cut into two, horizontally and apply the marinade over the pieces.

  • Leave thus for 2-3 hours.

  • Heat a thin layer of oil in a frying pan and place as many chicken pieces as come in without touching each other. Turn once and lower the heat and let cook till tender and browned on both sides.

  • Serve hot.
