Stir fried Capsicum and Soya

Ingredients

  • Soya nuggets, 75 g, soaked in water, with a tsp of vinegar, for 15 minutes and drained
  • Capsicum (Simla mirch), chopped coarsely 1 cup
  • Onions, chopped coarsely 2 cups
  • Carrots, sliced into thin rounds 1 cup
  • Ginger-garlic paste 2 tsp
  • Oil ¼ cup
  • Jeera (cumin seeds) 2 tsp
  • Salt 2 tsp or to taste
  • Garam masala ½ tsp
  • Imli (tamarind paste) 2 tbsp
  • Gur ki shakkar (natural brown sugar) 1 tbsp or to taste
 

Preparation

  • Squeeze the nuggets. Mix together the nuggets, 1 tsp salt, ginger-garlic paste.
  • Heat the oil and sauté the nuggets over high heat till they get a slightly fried look.

  • Remove the pieces out of the oil, and in the same oil stir fry the onions over high heat till they look wet.

  • Add the capsicum and carrot and stir a few times.

  • Add the remaindered salt, imli, shakkar, and the soya.

  • Mix well, and serve hot.
