Chicken and Bacon Salad

Smoky chicken with a honey mustard dressing

Ingredients

  • Oven temp: 180 C- 375 F
  • Chicken (Broiler)
  • 1 (1 kg approx.), skinned
  • Bacon rashers 250 g
  • Salt to taste or 2 tsp
  • Capsicum, diced 1 cup
  • Honey Mustard dressing * 1 cup approx.
  • * Honey Mustard Dressing
  • Mix cup granular mustard and 1 tbsp honey into cup mayonnaise and whip to blend well.
 

Preparation

  • Wash the chicken, cleaning the hollow inside too. Prick the chicken all over and pat dry.
  • Wrap the bacon rashers around the chicken (cover the chicken with them) and place in a baking tin.

  • Place the chicken in the pre-heated oven and bake for an hour, turning it three times.

  • Remove the chicken from the oven and leave to cool.

  • When cool, de-bone the chicken and separate the bacon rashers.

  • Remove the fat from the bacon rashers, and keep aside.

  • Dice the chicken neatly into cubes of desired size.

  • Mix the dressing into the chicken and add the capsicum to it.

  • Arrange the salad into a serving platter and arrange the bacon around it (cut according to desired size.
