Sabut Nimbu ka Achaar (Whole lime pickle)

Ingredients

  • Nimbu (Sour Lime), whole 20
  • Juice of nimbu (sour limes) ¾ cup
  • Salt ½ cup (100 g)
  • Ajwain (thymol seeds), crushed 2 tsp
 

Preparation

  • Wash the limes and wipe dry.
  • Prick the limes in several places all around and place in a bowl.

  • Add the salt and crushed seeds and mix well.

  • Transfer the limes into a clean jar and pour the juice over.

  • Close the jar tight and place in the sun for ‘maturing’ till tender and brown.
