Fruity Rice Salad

A rice salad with an orange dressing

Type: Rice Varieties Serving: 6 Cooking Time: 45 minutes


  • Long-grained rice 1 cup, soaked for ½ hour
  • Lemon juice 1 tsp
  • Oil 1 tbsp
  • Mixed vegetables, diced and blanched 2 cups
  • (like, carrots, capsicum, cabbage, broccoli, cauliflower, etc.)
  • Orange Dressing:
  • Mix together:
  • Fresh Orange Juice ½  cup
  • Celery salt ½ tsp
  • Salt 1 ½  tsp or to taste
  • Kali Mirch (powdered black pepper) ¼ tsp
  • Ajwain (thymol seeds), roasted 1 tsp
  • Sugar 1 tsp


  • Drain rice and place in a pan with 1 ½ cups of water. Bring to a boil.
  • Lower heat, sprinkle lemon juice, cover and let cook over low heat for 9 minutes (rice is ‘bite like’).

  • Drain in a colander and cool under cold water. Rub in the oil and leave to drain and cool.

  • Mix together the rice, vegetables and the dressing.

  • Transfer on to a serving dish, chill and serve.
