What are Aragula leaves called in Hindi and Marathi

I don't know of any Hindi or Marathi name, but another name for them is Rocket leaves.

How to make soft and fluffy kulchas

Kulcha

Oven temp: 400 F-204 C
2 cups flour
1 tsp dry yeast
1/2 tsp sugar
1/2 tsp salt
1 tsp oil
1/2 cup sour curds
water to knead dough
greased baking tray

Method: Dissolve sugar in 1/2 cup lukewarm water and sprinkle yeast over it. Leave in a draught-free place to froth.

When frothy, add salt, oil, curds and yeast mixture to flour and knead to a soft dough with the lukewarm water and leave to rise in a draught-free place covered with cling film or wet cloth.

When risen and doubled, punch and knead again and leave to rise again.
When risen second time, knead a bit and shape into small balls and leave to rise again for about 1/2 an hour.

Pre-heat the oven. Flatten the balls and roll thin. Place the rolled kulchas on to the baking trays.

Bake in the pre-heated oven for 5-7 minutes. Your kulchas are ready.

You can substitute each egg with 1/4 tsp milk and 1 tsp vinegar and add it to the custard mixture. It will be less fluffy, but taste fine.

How to prepare egg less cake in microwave

Eggless Vanilla Cake (Microwave)

Ingredients: 2 cups flour
2.5 tsp baking powder
1/2 cup butter
1.5 cups sugar - powdered
1/2 water
3/4 cup dahi/yogurt
1 tsp vanilla essence
1/4 tsp salt
2 x 9 inch round or square microwavable cake dishes

Method: Line the base of the tins with butter paper or grease the bases and dust either with maida or sugar till well coated.

Sift the flour and baking powder and transfer into a mixing bowl.

Add the salt, sugar, butter, water and vanilla. Beat the mixture using a wooden spoon or a beater till well blended.

Add the dahi to the cake batter and beat till smooth. The batter looks almost glossy when done.

Divide the batter into the dishes.

Bake one cake at a time, at 100 per cent for two minutes. Rotate container half way and bake for another two minutes. Rotate again and bake for one minute.

Let stand for five minutes then turn cake out of the tin.
