mam, ihad made pindi channe according to your recpie but i made one change that i boiled channe along with soda. i want to know that why should we soak channe with soda? is there any particular reason? and should we throw soda water before cookinig channes? thanks.

You soak them with soda to tenderise them faster. If soaking overnight it is not necessary. I usually like to throw soda water and put fresh water as sometimes you might get an after taste of the soda.

You have to sprout the daal as given below, and then boil it very slightly. After it cools, add salt, lemon juice, green chillies and coriander leaves, and some chaat masala if you so desire. Sometimes people like to add onions and boiled potatoes too.


Bean Sprouts

Clean and wash the grains to be sprouted, and soak in water coming up to at least 1 ½cm/1” above them, for about 4 hours in Summer and 7-8 hours in Winter.
Drain the water away and transfer the grains into a wide mouthed jar. Tie a piece of muslin over the mouth of the jar.
Place the jar at an angle, mouth side down, in a wide container (idea being that no water stands at the bottom).
Three times a day, pour water into the jar, drain out and keep at an angle again. Repeat this till sprouts are of desired length.
Alternatively, tie drained grains in a piece of muslin, and leave to drain at a convenient spot. Pour some water over this about three times a day, till the sprouts are of the desired size.
Another method, is to use gadgets available for the purpose, following their instructions!
