Hello Maam,
Please let me know if and at what stage can dough for making bread be refrigerated?
What would be the procedure regarding the same and how to reuse it ?
This is in case, when the power goes off during the bread making process.

After kneading it, you can refrigerate it. It will continue to rise, but very slowly. Before baking it you should it bring it back to room temperature before kneading a second time.

Hello Niru
I have two queries....1) What is QUINOA in Hindi and where in Delhi can I find it ?
2) Is the substitution of butter with oil ( in baking) really the healthier option or just marginally so ?

I am afraid I have not found a hindi name for Quinoa. It is from the amaranth family (ramdana/rajgira/ragi). But I have not seen it here.

To my mind it is only marginal. In fact where calories are concerned, butter has more water content therefore some consider it less fattening. Of course cholestrolwise it is better to have oil.
