Hello maam,
Please let me know how zest of orange and lemon is made?
Is the skin grated directly or is it to be dried in the sun first?

I have never utilized my microwave convection and have been doing all my baking in my OTG with excellent results. One of the reasons for my ignoring the convection option is conflicting advise I have read on the internet .
My query is....does the convection oven temperature setting have to be about 20* below the temperature setting required by the recipe for the electric oven ? I bake almost all my cakes at a comfortable 150^ C in my tiny OTG. What about muffins and cupcakes ?

To my knowledge the temperature should be the same as a normal oven. But I think it would be better if you read up the literature that comes with the oven which gives these basic facts. Whenever I have cooked in a convection oven (which is not too often as I have a cooking range), I have cooked at the temperature of a normal oven. As it is each oven differs minimally, so you have to cook a few times to get to know your oven. But I can assure you the results of the convection oven will be better than the OTG, so go ahead and start using it.

I was gifted two steel mini loaf pans but hesitate to use them as I am not sure if the metal will affect the loaf/ cake in terms of texture /flavor/colour. What adjustment should I make in the oven temperature in Celcius ?

Even though aluminium is better, steel will not make too much of a difference. Go ahead and use them the normal way.

which company otg is better (plz mention model no also)

Sorry but I cannot enlighten you on the make or model. You will have to check it out yourself. I am not supposed to mention either.
