Hello Maam,
I tried out your whole wheat bread recipe , using
half each of atta and maida. I followed your steps religiously.
My batter had not quite doubled even after one and half hours. I had kept it in a warm oven.
After baking,
The top was flat and cracked.
Even after fully cooling, it was difficult to cut.
Please let me know the probable causes.
Thanks,
Anju

It could only be the yeast which was not effective. YOu should sprinkle some over water and leave for sometime. If it does not start to froth in 10-15 minutes, buy a fresh packet.
In any case it takes a few attempts to get it right, because each oven is different too. Temperature of the oven is important too.
Flat and cracked could also mean it rose and fell.

Hello again maam,
Just wanted to know whether stainless steel utensils can be used in an otg?
Also, what is a "dutch oven"?
warm regards,
Anju

You can use it in an emergency but not ideally.
A Dutch oven is a heavy bottomed deep pan with a fitting lid.

Hello maam,
I am interested in baking, that's why I am looking around at various bread, pizza recipes. I have noticed that both bread and pizza bread have the same ingredients and to some extent the same steps. Could you help me understand what is the difference in the two? As I understand, the only difference appears in the kneading of the bread dough, am I right?
Please do excuse my ignorance , I turn to you as a teacher.
Thanks a lot,
Anju

You have understood the recipe right. You are most welcome to ask what ever you want, do not feel conscious of it.

Hello maam,
Please tell me , in your recipe for basic bread, instead of making loaves, can the whole dough be baked and then cut into slices? what changes in temp etc would be needed?
How to tell when bread is done?
Thanks,
Anju

It is only by making loaves that you can cut slices! You can use the whole dough if you have a big enough tin for it (loaf tin).
Temperatures are given in the recipe.

Hello maam,
Please tell me what would be the substitute per egg in cookie recipes, if one wishes to make it vegetarian?

Also maam, could you please provide some atta/maida/suji rusk recipes? Can they be made in otgs/ gas etc? please guide.

Thanks,
Anju

I think I wrote to you earlier that 1 egg=1/4 cup milk+1 tsp vinegar.

Sorry I do not have rusk recipes.
