Vegetable broth is very simple. Just put a mixture of vegetables, some ginger if you like, a bay leaf, black peppercorns and water. Bring to a boil and then simmer for 15 minutes over low heat. Strain and use, adding salt to taste.
Nimbu (Sour Lime), whole 20
Juice of nimbu (sour limes) ¾ cup
Salt ½ cup (100 g)
Ajwain (thymol seeds), crushed 2 tsp
Method
Wash the limes and wipe dry.
Prick the limes in several places all around and place in a bowl.
Add the salt and crushed seeds and mix well.
Transfer the limes into a clean jar and pour the juice over.
Close the jar tight and place in the sun for ‘maturing’ till tender and brown.
