just answered this one.

Hi Niru,
I observed a color change in eggless mayonnaise from white to light pink color after 15 days of its preparation. Can you help me out why this happened? Is there any contamination or any chemical reaction which causes change in color of mayonnaise?

I don t know which recipe you are talking about. If it is the white sauce based, it should not be kept more than 4-5 days in the refrigerator. The color pink does not sound good.

I do not have a recipe of my own for this. But here is one you can try:

Melting Chocolate Cake

Chef: Marcus Mathyssek Executive Chef, Hyatt Regency, New Delhi

Ingredients: 1/2 cup flour
1 cup unsalted butter
1 1/4 cup dark chocolate
1 1/4 cup sugar
8 eggs

Method: Melt the chocolate on a double boiler and mix in the butter.

Whip the eggs and sugar to a froth. Gradually add the flour to the whipped eggs.

Now, fold in the chocolate and mix well. Take greased moulds and fill the chocolate mixture.

Refrigerate for 12-24 hrs and then bake for 5-6 minutes. Serve with mascarpone or ice-cream
