Thin, fried savoury ‘straws’ of besan (chickpea flour) |

Ingredients

Besan (Chickpea flour) 1 cup

Salt 1 tsp or to taste

Oil for deep-frying

A sev making press (like a cookie press, with the fine holed disk)

Preparation

Mix besan and salt. Add water and mix into a stiff dough.
Place dough in the sev making machine, fixed with a sev plate, of the smallest holes.
Heat oil and press out the sev in a circular motion. Turn over and fry till crisp, but let it not get dark brown.
Lift out of the oil, drain on absorbent paper. Break into small pieces and store in an airtight jar.
