Kulcha rolls with Aloo Achari

Ingredients

Kulchas 4
-
Potatoes, boiled, peeled and cubed 250 g

Sarson ka tel (Mustard oil) 2 tbsp
-
Methi dana (fenugreek seeds) ½ tsp
-
Saunf (Fennel seeds) 2 t sp
-
Kalonji (Nigella seeds) 1 tsp
-
Amchoor (dried mango powder) 1 tsp
-
Salt 1 tsp or to taste

Chilli powder ½ tsp or to taste

Haldi (Turmeric) ½ tsp

Aluminum foil and tooth-pick to pack the kulchas

Preparation

Heat oil and add the methi, saunf and kalonji
Add the potatoes and mix well.
Add the amchoor, salt, chilli powder and haldi and saute till the potatoes look a little fried.
Place some mixture in the middle of a kulcha, fold over and secure with a tooth-pick.
Wrap in aluminum foil and pack.
