Makkai Vada (Corn fritters)

Ingredients

Corn, removed from the cob 3 cups

Coriander (Dhania)leaves, chopped 2 tbsp

Green chillies, chopped to taste

Coriander (dhania) powder 1 tsp

Cumin seeds (Jeera) 2 tsp
-
Dried Mango powder (Amchoor) 1 tsp

Salt 1 tsp or to taste

Oil for deep frying

Preparation

Puree the corn in a blender, without adding water.
Mix corn, coriander leaves, green chillies, cumin seeds, salt, coriander powder, and mango powder well together.
Make flat rounds, with a hole in the centre (like a ring).
Fry first in hot oil, and then turn over and cook over low heat, till golden.
You can half fry the vadas then fry again over high heat just before serving with chutney.
