Scrambled Egg on Toast

Ingredients

Eggs 2

Cheese, grated 2 tbsp (optional)

Salt and pepper to taste

Hara Dhania (coriander leaves) chopped 1 tsp
-
Green chillies, chopped to taste

Milk 2 tbsp
-
Toasted bread 1 slice

Preparation

Keep ready a pan of hot water over low heat, which will take a smaller pan (in which the eggs will cook).
Break the eggs into the smaller pan and beat slightly. Add cheese salt, pepper, dhania, green chillies and milk.
Place this pan over the hot water and as the eggs set on the bottom and sides of the pan, stir gently with a spoon, so that the uncooked egg flows to the bottom and comes in contact with the base.
Continue thus till eggs are set. The eggs should be soft and creamy. If you over-cook, the eggs will harden and there will be water floating around it. In fact, remove them from heat, a couple of seconds before they are set, as they tend to cook further in their own heat.
Spoon egg mixture on to the toast, and serve.
