Potato Pancakes
|
Pancakes of potato batter filled with corn |

Ingredients
|

Potatoes, peeled and grated 2 ½ cups (500 g)

Dahi ½ cup (100 g)

Milk ½ cup (120 g)

Baking powder ½ tsp
-
Maida (flour) 2/3 cup (80 g)

Eggs, slightly beaten 2
-
Salt 1 tsp, or to taste

Oil to cook the pancakes
-
Filling, mix together :
-
Corn, cream style 1-1 ½ cup
-
Grated cheese 2 tbsp
-
Powdered black pepper 1/8 tsp
-
Salt 1 tsp
-
Oregano leaves, dried 1 tsp
-
Coriander leaves(Hara Dhania), chopped fine 2 tbsp
-
Green Chilli, chopped to taste

Preparation

Bring the corn mixture to a boil, then lower the heat and simmer for about 2 minutes. Keep warm till ready to serve.
Mix together the potatoes, dahi, milk, baking powder, maida, egg and salt, and beat till smooth.
Heat a non-stick pan covered with a thin layer of oil.
With the heat on high, drop about ¼ cupful of the batter and spread a little.
Lower the heat and cook till crisp and brown on the under side.
Flip the pancake and cook till the other side is brown and crisp too.
Take a pancake place some filling in the center and fold over. Repeat with all the pancakes thus and serve hot.
