Ingredients
|

1-2 long baigans (egg plants) of the thick variety
-
Oil to fry the baingans
-
Besan (Chick-pea flour)to dust the baingan slices ]
-
½ tsp salt ] mixed together
-
¼ tsp chilli powder ]
-
2-3 tomatoes, de-seeded and chopped fine ]
-
salt to taste ] mix together
-
powdered black pepper to taste ]
-
Hara Dhania (Coriander leaves) for garnish

Preparation

Slice the baingans into rounds about ½” thick and dust with the maida mixture.
Heat the oil and fry the baingans till brown and cooked through but still firm.
Drain on to an absorbent paper, top with the tomato mixture and serve garnished with the hara dhania.
