Gajar Frans Bean

Green/String Beans, sautéed with carrots

Type: Vegetarian Serving: 6 Cooking Time: 30 minutes

Ingredients

  • 500 g Frans (Green/String) beans (4 cups after cutting)
  • 250 g carrots, peeled (1 1/2 cups, diced)
  • ¼ -cup (60 g) ghee (clarified butter)
  • 1 tsp jeera (cumin seeds)
  • ¼  tsp heeng (asafetida)
  • 1 tsp finely chopped ginger
  • 1 cup  (250 g) onions, grated
  • 1 cup (250 g) tomatoes, grated
  • 2 tsp powdered dhania (coriander seeds)
  • 2 tsp salt
  • ½ tsp haldi (turmeric)
  • ½ tsp chilli powder
  • ¼ tsp garam masala
 

Preparation

  • Wash the beans, and string them. Cut them into small pieces, horizontally (about 1/2cm/1/4").
  • Cut the carrots into cubes of 1cm/1/2".

  • In a heavy based pan, heat the ghee and add the jeera and the heeng. When the seeds splutter add the ginger and onions and sauté till slightly brown.

  • Add the tomatoes and stir fry till the fat separates, and add the dhania , salt, haldi, chilli powder and the garam masala.

  • Add the beans and the carrots, and sauté over high heat till they look glossy.

  • Lower the heat and cook covered, till tender, stirring off and on to ensure that it does not scorch. Takes about 20-30 minutes. Serve.
