Vegetable Stew

Ingredients

  • Oil 2 tbsp
  • Cloves (Laung) 4
  • Green Cardamom (Chhoti Elaichi) 4
  • Cinnamon (Dalchini), broken into tiny pieces ¼  tsp
  • Curry Leaves (Kadhi patta ) 12-15
  • Onions, chopped fine ½ cup
  • Green chillies, slit into two 3-4
  • Ginger, cut thinly 1 tbsp
  • Mixed Vegetables, peeled and cubed * 500 g
  • Salt 2 ½ tsp or to taste
  • Coconut milk (thick) 1- 1 ½ cups
  • Lemon juice 1 tbsp or to taste
  • Coriander leaves (Hara Dhania) chopped to garnish
  • *Ghiya, beans, carrots, gobhi, potatoes, etc.
 

Preparation

  • Heat the oil in a pan and add the laung, elaichi and dalcnhini. When they change color a bit, add the onions, green chillies, ginger, curry leaves and saute till a little soft.
  • Add the vegetables and turn around over high heat till slightly opaque. Mix in the salt and add enough water to cover the vegetables.

  • Bring to a boil, and then lower the heat and cook, uncovered, till vegetables are cooked but bite like.

  • Add the coconut milk and lemon juice, and simmer till heated through, but let it not come to a boil.

  • Serve hot, garnished with the hara dhania.
