Ingredients

Oil 2 tbsp

Cloves (Laung) 4

Green Cardamom (Chhoti Elaichi) 4

Cinnamon (Dalchini), broken into tiny pieces ¼ tsp

Curry Leaves (Kadhi patta ) 12-15

Onions, chopped fine ½ cup
-
Green chillies, slit into two 3-4
-
Ginger, cut thinly 1 tbsp
-
Mixed Vegetables, peeled and cubed * 500 g

Salt 2 ½ tsp or to taste

Coconut milk (thick) 1- 1 ½ cups

Lemon juice 1 tbsp or to taste
-
Coriander leaves (Hara Dhania) chopped to garnish

*Ghiya, beans, carrots, gobhi, potatoes, etc.

Preparation

Heat the oil in a pan and add the laung, elaichi and dalcnhini. When they change color a bit, add the onions, green chillies, ginger, curry leaves and saute till a little soft.
Add the vegetables and turn around over high heat till slightly opaque. Mix in the salt and add enough water to cover the vegetables.
Bring to a boil, and then lower the heat and cook, uncovered, till vegetables are cooked but bite like.
Add the coconut milk and lemon juice, and simmer till heated through, but let it not come to a boil.
Serve hot, garnished with the hara dhania.
