Baked Mushrooms and Capsicum

Ingredients

Oven Temp: 325F-160C

Butter 2 tbsp (30 g)

Onion, chopped fine ½ cup (100 g)

Capsicum (Simla Mirch) de-deeded and sliced thin 1 large
-
Mushrooms, wiped and sliced thick 200 g
-
Salt to taste or 2 tsp
-
Black pepper ( Kali Mirch ), freshly powdered ¼ tsp

Cheese, grated ¾ cup (90 g)

A few tomato slices for garnish

For White Sauce:
-
Milk 2 cups (480 ml)
-
Flour (Maida) ¼ cup (30 g)
-
Butter 2 tbsp. (30 g)
-
Salt to taste or 1 tsp
-
Black pepper ( Kali Mirch ), freshly powdered 1/8 tsp

White wine (optional) ¼ cup (60 g)

Preparation

Make White Sauce
with the sauce ingredients and keep aside.
Make the mushroom mixture: melt the butter add onions and capsicum and stir-fry till they look ‘wet’.
Add the mushrooms and continue to stir-fry over high heat till vegetables look like they are coated with the butter.
Take it off the heat and mix in the salt, pepper, white sauce and wine (if using).
Transfer mixture into an oven proof serving dish.
Sprinkle the cheese to cover the mixture, garnish with the tomato slices and bake in a pre-heated oven for half an hour, or till cheese is slightly brown.
