Browned Onions (Micro)

Type: Vegetarian Serving: 1 1/2 cups

Ingredients

  • Oil 1 cup (240 g)
  • Onions, grated/sliced uniformly 4 cups (1 kg)
 

Preparation

  • Mix oil and onions and cook uncovered at HI for 8 minutes, stirring once. Cover and cook at 70% for 25-30 minutes, stirring twice, till brown and crisp. When browning onions, it is important that the onions are grated or sliced uniformly. Only then will you get uniformly browned onions. Every time you stir, level the onions before continuing to cook. When browned, take the dish out of the oven and leave, tilted a bit for the extra fat to collect away from the onions. Leave thus for about an hour, then press onions between sheets of kitchen towels or brown paper, to drain off all the fat. Store, refrigerated in an airtight jar, to be used as and when required.
