Shahi Guchchi

Type: Vegetarian Serving: 4-6

Ingredients

  • Khoya (solidified milk)-crumbled 250 gm
  • Ghee (Clarified Butter) 2 tbsp
  • Jeera (Cumin seeds) 1 tsp
  • Tomato freshly pureed 1 cup
  • Ginger paste 1 tsp
  • Chilli powder 1 tsp
  • Salt to taste or 1 1/2 tsp
  • Guchchi (Morrels) 100 gms, soaked 3-4 hours
  • Garam masala 1 tsp
  • Coriander leaves for garnish
 

Preparation

  • Rinse the guchchis well to remove grit and squeeze well to remove extra water.
  • Heat ghee and add the jeera. When seeds splutter, add the tomato and ginger and sauté till fat separates. Add the chilli powder and salt and mix well.

  • Add khoya and cook till well mixed.

  • Add the guchchis and sauté for 3-4 minutes.

  • Serve garnished with the garam masala and the coriander.
