Simple tangy version of Bottle gourd/lauki/ghiya |

Ingredients
|

Lauki (Bottle Gourd), peeled and chopped 1 kg

Hari mirch (green chilli), chopped to taste

Ghee (clarified butter) 2 tbsp

Zeera (cumin seeds) 2 tsp
-
Adrak (Ginger), chopped fine 1 tbsp

Kadhi Patta (Curry leaves) 1 sprig

Sendha namak (rock salt) 2 tsp or to taste

Chilli powder 1 tsp or to taste

Dhania (Coriander) powder 2 tsp
-
Garam masala 1 tsp
-
Sugar 2 tsp
-
Tamarind pulp 2 tsp
-
Hara dhania (Coriander leaves) for garnish

Preparation

Heat ghee in a wok and add the zeera. When it splutters, add the ginger and kadhi patta and saute till slightly colored.
Add the ghiya and green chillies and stir fry to mix well. When they look glossy, add the namak, chilli powder, dhania powder and garam masala.
Cook, covered over low heat till ghiya is tender.
Add the sugar and tamarind and serve hot garnished with the hara dhania.
