White Sauce/Cheese Sauce
|
A milk and flour based sauce used a lot in Western Cooking |

Ingredients

Milk 2 cups (480 g)

Maida (Flour) 2 tbsp (15 g)

Butter 1 tbsp (15 g)

Salt 1 tsp

Pissi Kali Mirch (powdered black pepper) ¼ tsp

Preparation

Melt the butter and add the maida, keeping the heat low.
Saute till just a suggestion of brown. Take the pan off the fire and add the milk very gradually, stirring vigorously all the time.
Add enough milk to make a paste at first, and when the paste is smooth and you are sure there are no lumps, add the rest of the milk.
Put the pan over the fire again and let it come to a boil, stirring often to avoid scorching. When it comes to a boil, lower the heat and simmer for 1-2 minutes, continuing to stir.
Add the salt and pepper and any other desired seasoning.
Cheese Sauce
Made by blending 125 g (1 cup) grated cheese to this.
