White Sauce/Cheese Sauce

A milk and flour based sauce used a lot in Western Cooking

Type: Sauces Serving: 4 Cooking Time: 10 minutes

Ingredients

  • Milk 2 cups (480 g)
  • Maida (Flour) 2 tbsp (15 g)
  • Butter 1 tbsp (15 g)
  • Salt 1 tsp
  • Pissi Kali Mirch (powdered black pepper) ¼ tsp
 

Preparation

  • Melt the butter and add the maida, keeping the heat low.
  • Saute till just a suggestion of brown. Take the pan off the fire and add the milk very gradually, stirring vigorously all the time.

  • Add enough milk to make a paste at first, and when the paste is smooth and you are sure there are no lumps, add the rest of the milk.

  • Put the pan over the fire again and let it come to a boil, stirring often to avoid scorching. When it comes to a boil, lower the heat and simmer for 1-2 minutes, continuing to stir.

  • Add the salt and pepper and any other desired seasoning.

  • Cheese Sauce

  • Made by blending 125 g (1 cup) grated cheese to this.
