Cheesy Orange Cake (Santra aur paneer ka cake)

Ingredients

Oven temp: 350 F- 180 C

325 F- 160 C

Paneer (Indian Cottage Cheese) grated 200 g (2 cups, lightly packed)

Maida (Refined flour) 180 g (1 ½ cups)

Fresh Orange juice ¾ cup
-
Lemon juice 2 tbsp
-
Baking powder 2 tsp
-
Vanilla ½ tsp
-
Sugar 1 cup (240 g)
-
Salt ½ tsp
-
Orange rind 2 tsp or ½ tsp dried

Eggs 3
-
A 9” round or 8” square tin, greased and dusted with flour or lined with grease proof paper

Marmalade to cover the top of the cake

Preparation

Mix together, the paneer, maida, orange juice, baking powder, vanilla, sugar and orange rind.
Beat till smooth and glossy. Add the eggs and beat again.
When smooth, transfer the mixture into the prepared tin, level it from the center and bake in a pre-heated oven for 10 minutes over the higher heat, then lower the heat and bake for another 25-30 minutes.
When cool, remove from the tin and transfer on to a serving dish. Spread a layer of marmalade over and serve.
