Gajar ka Halwa

A sweet from carrots |

Ingredients

Carrots, grated 1 kg

Milk 1 kg (5 cups)

Sugar 125 g (1/2 cup)

Cardamom (elaichi), powdered 1 tsp

Almonds, blanched and shredded 5-6

Raisins (kishmish) 8-10

Clarified butter (ghee) 2 tbsp

Preparation

In a wok or a wide mouthed pan with a heavy base, place the carrots and the milk, and bring to a boil.
Cook the two together, till most of the milk has evaporated (high or low heat depends on how often you can stir it, to avoid scorching).
Add the sugar and continue stirring, till the carrots have a slightly glossy look and the moisture has evaporated.
Add the cardamoms and `ghee' and half the almonds and raisins, and mix well.
Transfer onto a serving dish and garnish with the remainder of the almonds and raisins.
