Sponge Cake layered with cream and mango |

Ingredients

A 4 egg Sponge Cake
-
Mango, peeled and sliced 2-3
-
Mango juice ½ cup ]
-
Lemon juice 2 tsp ] mixed together
-
Cream, chilled 1 ½ cups (360 g)

Powdered sugar 2 tbsp
-
Almonds/Walnuts, chopped 2 tbsp
-
Mint leaves for decoration

Preparation

Beat cream and sugar together till cream holds shape (if cream is not thoroughly chilled, keep over ice and beat, otherwise it will form into butter).
Place one sponge on a serving dish, upside down, and remove the paper. Sprinkle half the juice mixture over.
Spread a layer of mango slices and sprinkle nuts over it. Spread a layer of the whipped cream.
Place the other sponge upside down over this, remove the paper and sprinkle with the rest of the juice.
Cover the cake with the cream and decorate with mango slices, nuts and the mint leaves. Chill and serve.
