Besan ka Laddoo

Ingredients

Chick pea flour (Besan) 220 g (2 cups)

Clarified Butter (Ghee) 150 g (10 tbsp)

Cardamom (Elaichi) powder ½ tsp
-
Powdered sugar 180 g (3/4 cup)

Some roasted and chopped almonds to decorate, if you so desire

Preparation

Melt the clarified butter and add the flour.
Stir fry over low heat.
It is done when it gets a pasty look, and then the mixture tends to stick together in patches. Its finally done, when the colour is a light brown, and the base of the pan looks a little wet
Shut off the heat and leave the mixture to cool completely.
Add the sugar and the cardamom, and mix very well, pressing and scraping, and rubbing it between your fingers to make sure that it is blended thoroughly.
Proceed to shape the `laddoos' now.
Decorate the top of each with the almonds.
You can make these and store in air tight containers. They last a minimum of 4-6 weeks in the refrigerator.
