Ingredients

4 egg Sponge Cake
-
made in the biggest rectangle (12x9”) baking tray (has to be a very thin layer) OR 27 lady fingers
-
1 ¼ cup milk + 2 tbsp coffee powder ]

2 tbsp sugar ] mix together
-
2 tbsp coffee liqueur ]

Cheese mixture:
-
4 eggs, separated
-
4 tbsp sugar
-
500 g Mascarpone Cheese
-
1 tbsp coffee liquer or cognac
-
-
A rectangular glass serving dish
-
Bitter sweet cocoa powder or finely grated semi sweet chocolate for garnish

Preparation
|

Cut the sponge layers to fit two layers of the dish. Toast these and keep aside.
Make the cheese mixture: whip the egg yolks and sugar till creamy. Add the cheese and the liquer or cognac.
Whip the egg whites stiff, and fold into the cheese mixture and keep aside.
Dip the sponge pieces in the coffee mixture for one layer at the bottom of the serving dish.
Spread half the cheese mixture over this and then dip the rest of the sponge and layer to cover the cheese mixture.
Spread the rest of the cheese mixture over this and chill at least 2 hours.
Dust with bitter sweet cocoa powder or finely grated semi sweet chocolate and serve.
