Pita Pizza

( I usually make them with my home made pitas)

Ingredients

  • For Pita (makes 6):
  • Oven temp: 200 C-450 F
  • Atta (whole wheat flour) 2 cups (240 g)
  • Dry yeast 1 tsp
  • Luke warm water ½ cup
  • Salt ½ tsp or to taste
  • For Pizza
  • Pitas 6
  • A heavy based frying pan with a lid
  • Tomato puree 1/2 cup        
  • Garlic paste 1/4 tsp
  • Salt to taste or 1/2 tsp
  • Sugar 1/2 tsp
  • Chilli powder 1/4 tsp
  • Dried oregano leaves 1/4 tsp
  • Basil leaves, chopped 2 tsp OR
  • Dried basil leaves 1/4 tsp
  • Mozarella or Pizza cheese, grated 1/2 cup
 

Preparation

  • Pita
  • Sprinkle the yeast over the luke-warm water and leave in a draught-free place for 10-15 minutes.

  • By now it should be frothy (if not, change your packet!). Mix the yeast into the flour along with the salt and need to a soft dough with water. A finger pushed in, should go in without effort.

  • Cover with cling film or a wet cloth and leave in a draught-free place for about an hour, to rise a little bit.

  • Divide the dough into 6-8 pieces and roll into rounds. Roll out these rounds into flat round or oval ‘rotis’ and bake in the pre-heated oven for 8-10 minutes (they should puff up and get a light brown). Remove from oven and pile one on top of the other or pressed with a plate or lid. This helps to soften the cover a little so that it is easy to cut into half and fill the pocket thus formed.

  • Pizza

  • Mix together, the tomato puree, garlic, salt, sugar, chilli powder, oregano and basil.

  • Take a pita and smear with the tomato mixture and then sprinkle cheese over it.

  • Heat the frying pan till very hot—when you hold your palm about 6” over it, you should feel the heat pretty strong.

  • Now place the prepared pizza in the pan, cover and lower the heat. Let cook till the bottom is crisped and cheese has melted on top. Remove and repeat with the rest.
