Ingredients

Bread, thin slices 6, edges cut off

Oil to pan fry

Lettuce or Cabbage leaves 6-8

Paneer, grated 1 cup
-
Spring onions, chopped fine ¼ cup

Khira or kakdi, finely chopped 2 tbsp

Grated carrots 2 tbsp
-
Salt 1 tsp or to taste

Bhuna pissa jeera ½ tsp
-
Tooth picks to secure the folds

Garnish of choice

Preparation

Heat the oil. Brown the bread slices over high heat, on both sides. Bend in the centre while still hot and leave to cool.
Mix together the paneer, spring onions, gherkins and carrots.
To make up the folds, put a lettuce or cabbage leaf to line the folded bread and fill some paneer mixture into it. Pass a toothpick through the folded sandwich.
Garnish and serve.
