Ingredients

Onions, sliced thinly ½ cup (100 g)

Red Bell Pepper (Laal Simla Mirch) 1 (approx. 200 g)

Yellow Bell Pepper (Peeli Simla Mirch) 1(approx. 200 g)

Baby Corn 100 g

Olive Oil 2 tbsp (30 g)

Basil leaves, chopped fine 2 tbsp.

Salt 1 tsp or to taste

Black pepper (Kali Mirch ), freshly powdered ¼ tsp

Preparation

Cut the peppers into halves, lengthwise and de-seed and cut off white veins. Shred into thin strips.
Slice the Baby Corn into two, lengthwise.
Heat oil in a large pan and add the Baby Corn and the onions. Stir till onions are ‘wet’ (slightly soft).
Add the Peppers and Basil leaves and continue to stir over high heat till they are mixed well and look wet but are firm.
Add the salt and black pepper and serve hot.
