Yummy Grilled Vegetables

Ingredients

Bell pepper (red) 1 (approx. 100 g)

Bell pepper (yellow) 1 (approx. 100 g)

Capsicum 1 or 2 (approx. 100 g)

Zuchhini 1 (approx. 100 g)

Onion 1 large (approx. 100 g)

Garlic paste ½ tsp
-
Salt to taste or 2 tsp
-
Powdered black pepper ¼ tsp
-
Basil leaves chopped 2 tbsp

Olive oil 2 tbsp

Preparation

Cut the peppers and capsicum into half lengthwise and de-seed. Then cut into ‘sqaures’ of similar size.
Cut the onions to match the above vegetables, separating the layers, not keeping more than 3 layers joined.
Cut the zucchini into slices about ¼” thick.
Place all the vegetables in a bowl and add the rest of the ingredients. Mix well and leave to marinate for an hour or so.
Grill the vegetables over coals or a gas flame in a roasting or grilling tray till dark over the edges. They should be crunchy.
