Ingredients
|

2 1/2 Cups (500 gms.) milk
-
1-1 ½ tsp yogurt, for a starter

Preparation

Boil the milk and tansfer into the container in which the yogurt is to be set. Leave it to cool till lukewarm.
In a small bowl, beat yogurt till smooth and add 2 tbsp milk to it. Mix well.
Add this to the rest of the milk and stir with a spoon to mix well.
Cover the container and place in a draught free place to set. Do not move the container while the yogurt is setting.
Normally takes about 6-7 hours to set in cool climate and less in warm weather.
Place it in the refrigerator for a couple of hoursbefore serving the yogurt.
Note: Time taken varies according to the room temperature:
In warm weather, it takes 3-4 hrs. As it gets cooler, cover the container with layers of cloth or a 'cosy' and it takes roughly, overnight, when very cold. A quick way to set it, is: Switch on your oven to a maximum, for 5 mins. Now switch it off, and place your covered container in it. Takes 2-3 hrs.
