Ingredients

Pomfret, Sole or Singhara, scaled and gutted

and sliced diagonally into 1” thick slices 1kg ]

Lemon juice 2 tbsp ] marinate for 10 minutes and wash off

Salt 1 tsp ]

Soft Banana leaves 6-8

A Frying pan with a thin layer of oil.

Water, as required

Vinegar, as required

Preparation

Discard the backbone of the leaf. Cut into pieces large enough to seal each piece of fish by wrapping it around.
Take a piece of leaf, place a piece of fish over it and cover fish completely with a layer of the chutney on all sides.
Bring the edges of the leaf together to fold over the fish, and seal well. Tie with a thin thread and keep aside.
Heat the oil in the frying pan, lower the heat and arrange the fish packages in a single layer. Cook over low heat for 1 minute and flip over.
Sprinkle with water and vinegar, cover and cook for about 10 minutes, turning once in between. Serve hot, removing the thread.
