Tomato and Broccoli Soup

Ingredients

Tomatoes, chopped roughly 4 cups (750 g)

Carrot, chopped fine ½ cup

Potato, peeled and chopped fine ½ cup

Powdered black pepper ½ tsp

Sugar 1 tsp (5 g) or to taste

Salt 2 tsp or to taste

Broccoli, broken into tiny flowerets ½ cup

Cream for garnishing 4 tbsp (60 g)

Water, as required

Preparation

Cook together the tomatoes, carrot, potato, 1 tsp salt and one cup water, till the vegetables are cooked enough to be mashed.
Remove from the fire and when cool enough to handle, blend the mixture in a blender or strain through a soup strainer. Measure the liquid and add water to make 4 ½ cups.
Bring to a boil again, add the broccoli and then simmer. Add sugar and black pepper. Simmer another 5 minutes.
Pour the soup in bowls, garnish with the cream and serve hot.
