Stir fried Capsicum and Soya

Ingredients

Soya nuggets, 75 g, soaked in water, with a tsp of vinegar, for 15 minutes and drained

Capsicum (Simla mirch), chopped coarsely 1 cup

Onions, chopped coarsely 2 cups

Carrots, sliced into thin rounds 1 cup

Ginger-garlic paste 2 tsp
-
Oil ¼ cup
-
Jeera (cumin seeds) 2 tsp

Salt 2 tsp or to taste

Garam masala ½ tsp
-
Imli (tamarind paste) 2 tbsp

Gur ki shakkar (natural brown sugar) 1 tbsp or to taste

Preparation

Squeeze the nuggets. Mix together the nuggets, 1 tsp salt, ginger-garlic paste.
Heat the oil and sauté the nuggets over high heat till they get a slightly fried look.
Remove the pieces out of the oil, and in the same oil stir fry the onions over high heat till they look wet.
Add the capsicum and carrot and stir a few times.
Add the remaindered salt, imli, shakkar, and the soya.
Mix well, and serve hot.
