Cheesy Orange Cake (Santra aur paneer ka cake)

An orange and cheese flavored cake, good as a dessert too

Ingredients

  • Oven temp: 350 F- 180 C
  • 325 F- 160 C
  • Paneer (Indian Cottage Cheese) grated 200 g (2 cups, lightly packed)
  • Maida (Refined flour) 180 g (1 ½ cups)
  • Fresh Orange juice ¾ cup
  • Lemon juice 2 tbsp
  • Baking powder 2 tsp
  • Vanilla ½ tsp
  • Sugar 1 cup (240 g)
  • Salt ½ tsp
  • Orange rind 2 tsp or ½ tsp dried
  • Eggs 3
  • A 9” round or 8” square tin, greased and dusted with flour or lined with grease proof paper
  • Marmalade to cover the top of the cake
 

Preparation

  • Mix together, the paneer, maida, orange juice, baking powder, vanilla, sugar and orange rind.
  • Beat till smooth and glossy. Add the eggs and beat again.

  • When smooth, transfer the mixture into the prepared tin, level it from the center and bake in a pre-heated oven for 10 minutes over the higher heat, then lower the heat and bake for another 25-30 minutes.

  • When cool, remove from the tin and transfer on to a serving dish. Spread a layer of marmalade over and serve.
