A mouth watering cake with almonds in every bite! |

Ingredients
|

Oven Temp: 350 F-180 C

Flour (Maida) 1cup (120 g)
-
Almonds 1 cup, ground to a powder
-
Sugar, powdered 1 ½ cup (360 g)

Baking powder 2 ½ tsp
-
Salt ½ tsp
-
Oil ¾ cup (180 g)
-
Almond Essence ½ tsp
-
Eggs 3
-
Hot water ½ cup
-
Cake tins, 8” round, or 7” square 2 OR
-
A ring mould (I have used a bundt pan)

Preparation

Line the cake tins with grease proof paper or grease and flour. The ring shape will have to be greased and floured of course!
Sift the flour and baking powder into a mixing bowl. Add the ground almonds.
Add the salt, oil, essence and eggs and beat with a wooden spoon or electric beater.
Add the hot water and continue to beat till smooth.
Divide the batter into the two tins (or whatever pan you are using) and bake in a pre-heated oven for 35-40 minutes or till done.
