Colourful Vegetable Mould

A salad in the form of a jelly mould |

Ingredients

Lemon flavored jelly 1 pkt

Water 2 cups
-
Carrots, grated thick 1 cup ]

Simla mirch (capsicum), thinly sliced ½ cup ]

Phool Gobhi, diced small ½ cup ] blanched, cooled and drained well

Peas ½ cup ]
-
Hara Dhania, sprigs for lining mould

Salt 2 tsp or to taste

Pissi Kali Mirch ½ tsp
-
Vinegar 2 tbsp
-
Chilli sauce 2 tsp
-
Ajwain, roasted 1 tsp

Preparation

Heat 1 cup of the water and dissolve the jelly in it. When dissolved, add the rest of the cold water.
Add salt, black pepper, vinegar, chilli sauce and ajwain to the jelly. Place the dhania in a decorative manner over the base of the mould and pack the cooled and drained vegetable mixture on top of it.
Pour the jelly mixture over it. Leave to set. Takes about 2 hours.
To serve, keep the serving dish ready, plunge the mould into hot water for a second, place the plate upside down over the mould and turn over.
