Chicken and Bacon Salad

Smoky chicken with a honey mustard dressing |

Ingredients

Oven temp: 180 C- 375 F

Chicken (Broiler)

1 (1 kg approx.), skinned
-
Bacon rashers 250 g
-
Salt to taste or 2 tsp

Capsicum, diced 1 cup

Honey Mustard dressing * 1 cup approx.

Mix ¼ cup granular mustard and 1 tbsp honey into ½ cup mayonnaise and whip to blend well.

Preparation

Wash the chicken, cleaning the hollow inside too. Prick the chicken all over and pat dry.
Wrap the bacon rashers around the chicken (cover the chicken with them) and place in a baking tin.
Place the chicken in the pre-heated oven and bake for an hour, turning it three times.
Remove the chicken from the oven and leave to cool.
When cool, de-bone the chicken and separate the bacon rashers.
Remove the fat from the bacon rashers, and keep aside.
Dice the chicken neatly into cubes of desired size.
Mix the dressing into the chicken and add the capsicum to it.
Arrange the salad into a serving platter and arrange the bacon around it (cut according to desired size.
