Ingredients
|

Eggs, full boiled and chopped 6

Mayonnaise sauce (below): 1 cup

Oregano , dried ½ tsp

Mustard powder 1 tsp
-
Lettuce leaves 8

Egg, (preferably at room temperature) 1

Vinegar 2 tbsp

Salt 1/2 tsp
-
Powdered black pepper 1/8 tsp

Mustard oil 1/4 tsp
-
Sugar 1/2 tsp
-
Refined groundnut oil 1 cup

Preparation

Make the mayonnaise: Break egg into the jar of a blender (liquidiser). Add the vinegar, salt, pepper, mustard oil and sugar. Switch on blender at full speed, and immediately add the oil in a thin stream, with the blender on, all the time, till the required consistency is reached. This is like a thick cream.
Mix eggs, mustard, oregano and mustard together with mayonnaise.
Line a serving dish with the lettuce leaves, heap the egg mixture in the center and serve chilled.
