Baked Potatoes (microwave)

Ingredients
|

Potatoes, of uniform size 4 large (500-600g)

Salt and powdered Black Pepper to taste

Oil to rub the potatoes with

Hung curd ¾ cup (150 g)

Salt 1 tsp or to taste
-
Powdered Black pepper 1/8 tsp
-
Celery (or herb of choice), chopped 1 tbsp

Preparation

1. Wash and scrub potatoes and wipe them dry. Rub potatoes with salt, pepper and oil and prick with a fork at two or three places, so that they do not burst while baking.
2. Place potatoes on a microwaveable dish or directly on the rack. Cook covered at HI for 4 minutes, flip over and cook anther 4 minutes.
3. Remove from oven and check for doneness (should be able to dent them with the thumb and forefinger, without much pressure). In case not done, cook for some more time.
4. Grill uncovered, in the grilling mode (or in a separate grill if you don’t have the grill mode) for 2-3 minutes so that the covering becomes a bit crisp. (a little longer if potatoes have cooled down.).
5. Mix the curd, salt, pepper and celery.
6. Make a cross cut, like a plus sign, in the centre of one flat side of the potato, place the forefinger and thumbs of both hands in each corner formed by the plus sign, and press. A place is thus created for the dressing. Place some dressing in this and serve.
