Potato Pancakes

Pancakes of potato batter filled with corn

Ingredients

  • Potatoes, peeled and grated 2 ½ cups (500 g)
  • Dahi ½ cup (100 g)
  • Milk ½ cup (120 g)
  • Baking powder ½ tsp
  • Maida (flour) 2/3 cup (80 g)
  • Eggs, slightly beaten 2
  • Salt 1 tsp, or to taste
  • Oil to cook the pancakes
  • Filling, mix together :
  • Corn, cream style 1-1 ½ cup
  • Grated cheese 2 tbsp
  • Powdered black pepper 1/8 tsp
  • Salt 1 tsp
  • Oregano leaves, dried 1 tsp
  • Coriander leaves(Hara Dhania), chopped fine 2 tbsp
  • Green Chilli, chopped to taste
 

Preparation

  • Bring the corn mixture to a boil, then lower the heat and simmer for about 2 minutes. Keep warm till ready to serve.
  • Mix together the potatoes, dahi, milk, baking powder, maida, egg and salt, and beat till smooth.

  • Heat a non-stick pan covered with a thin layer of oil.

  • With the heat on high, drop about ¼ cupful of the batter and spread a little.

  • Lower the heat and cook till crisp and brown on the under side.

  • Flip the pancake and cook till the other side is brown and crisp too.

  • Take a pancake place some filling in the center and fold over. Repeat with all the pancakes thus and serve hot.
